Tell us a little about yourself?

Ysaac Ramirez. I was raised just over the mountain, in Rancho Cucamonga, until the young age of 12. From there spent my teenage years and young adulthood primarily in Memphis, TN. From there I’ve spent time in North Carolina, Texas, and New Orleans.

How did Porć come to be?

Porć has been a year and a half in the making. Like a lot of people during the pandemic I was uncertain of where my career was going to end up.I’ve spent 15+ years as a professional chef in fine dining, so I was trying to shift to something that I could do for myself and still stay afloat. It wasn’t until my recent trip to France that really solidified what I really needed to do. Go back back to the basics and create simple, honest food.

How do you describe and hope people feel when they’re eating your food?

Porć is a meat centric pop-up utilizing different techniques like smoking, grilling, and brasing. It’s an ode to my time spent throughout the south. It’s comfort food really. I hope to bring a little of the south to Palm Springs and to have people taste flavors that maybe are not familiar to them. This project is a labor of love that hopefully people will taste in the end product.

When you’re not in the kitchen, what can the people find you doing?

Travel and road trips.Other than that you can find my enjoying a couple High Lifes at Las Palmas brewery.

Anything you want to add or shoutout for the reader?

Porć will be constantly evolving and really what we are in the mood to bring to our guest. We will go with the seasons so there will always be something new to try.
